Clary Sage Pink Sundae, a lovely, pastel pink plant from the Mediterranean region. These beautifully veined blossoms’ stalks create eye-catching bouquet filler. Growing in robust multi-branching clumps, plants stand 8 in to 2 ft tall with a similar width. Prefer full sun and well-drained soil. Grown as an annual in Canada. Often used for the brewing of ales and ciders. Clary sage was formerly prized for its therapeutic properties. Today, however, it is mainly appreciated for its wonderful colour and allure to birds and butterflies.
Companion plants: Carrot, Tomato, Parsley, Strawberry, Rosemary, Beans, Thyme, Nasturtium, Oregano, Brassicas.
Far from: Fennel, Rue, Cucumber, Wormwood.
Planting tip: Soaking in warm water for up to 12H is recommended for improved germination. Plant salvia by seed outdoors after all danger of frost has passed in the spring. To encourage continuous blooms throughout the season, deadhead spent flowers periodically. At the end of the season, leave flowers on plants to encourage reseeding (and to feed the birds).
Harvesting tip: For harvest either as a fresh or dried flower, harvest when the bottom 3–4 flowers have opened. Hang to dry.
